a pan dish for potato casserole addicts

It’s best to boil and peel the potatoes the day before. Cut them into evenly thick slices using an egg slicer and fry them in a pan with plenty of oil or margarine/butter until golden brown. Sprinkle with salt, pepper, and other seasonings, if desired, and finish frying like “regular” fried potatoes. Now pour half of the milk into the pan with the potatoes and let it reduce. Stir to prevent burning. Turn off the heat and add the remaining milk to the pan. Reduce the heat again, stir, and you’re done! Sprinkle with some chopped parsley before serving. If you like, you can also add a knob of butter to the mixture—it tastes absolutely delicious!
