Mozzarella and salami skewers

Ingredients for 4 servings:

  • 1 bunch of parsley
  • 2 points mini mozzarella
  • salt and pepper
  • 1 bell pepper(s), red
  • 24 slices of salami
  • 4 tbsp olive oil
  • 4 slices of baguette
  • Pepper berries, pink
  • 12 wooden skewers

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the parsley, shake dry, pluck the leaves from the stems, and chop. Place the mozzarella in a sieve, drain, season with salt and pepper, and toss in the parsley. Trim, wash, and dice the bell pepper. Thread the mozzarella, bell pepper, and salami alternately onto the wooden skewers. Heat 2 tablespoons of oil in a pan and toast the bread for about 3 minutes, turning occasionally. Arrange the bread and skewers, drizzle with 2 tablespoons of oil, and sprinkle with pink peppercorns. 225 kcal per serving.
