Mozzarella with dried tomatoes

Ingredients for 4 servings:

  • 4 balls of mozzarella
  • 4 slices of bacon (breakfast bacon)
  • Tomato(s), dried, pickled in oil
  • Salt
  • pepper
  • Basil, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the mozzarella well and then cut it in half. Drain the sun-dried tomatoes and collect the oil. Top each half of the mozzarella balls with the sun-dried tomatoes. Then put the two halves back together so that the mozzarella is whole again. Wrap the whole thing with the bacon to form a parcel. Set aside. Heat a little of the tomato oil in a pan over medium heat. Then place the wrapped mozzarella balls in the pan so that the end of the bacon is browned. Brown well on both sides, but don’t let the mozzarella melt too much. Season with salt and pepper. If desired, drizzle with a little more tomato oil and arrange one mozzarella ball on a plate for each person. Serve garnished with basil. A great, but also quite rich, starter. But it’s also suitable as an in-between course.
