Ingredients for 1 servings:

  • 2 bananas
  • 200 g low-fat curd cheese
  • 90 g oat flakes, fine
  • 30 g oat flakes, wholegrain
  • 35 g almond(s), chopped
  • 2 egg whites
  • Blueberries, optional
  • Raisins, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Puree the bananas in a bowl with a hand blender and then stir in the low-fat quark. Stir in the oats and half of the chopped almonds. Beat the egg whites until stiff and fold in. Fold in blueberries or raisins (or both), if desired. Pour the mixture into a loaf pan and scatter the remaining chopped almonds on top for decoration. Bake at 180°C (350°F) for about 45 minutes. The cake should then be wonderfully moist and is best enjoyed fresh. Variations with raspberries, strawberries, blackberries, or dried cranberries instead of the raisins also taste great!
