Ingredients for 1 servings:
- 250 g spelt flour
- 150 g yogurt or soy yogurt
- 1 egg(s)
- 1 packet of vanilla sugar
- 100 g sugar, can also be replaced with less honey
- 125 g butter or margarine
- 125 ml milk
- 2 tsp, heaped baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 180 g muesli, according to taste
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Melt the butter or margarine and let it cool slightly in a mixing bowl. Whisk in the sugar, vanilla sugar, egg, yogurt, and milk. Mix the flour with the baking powder, baking soda, cinnamon, and salt, then pour it into the batter and mix well. Finally, fold in the muesli. Pour the batter evenly into the muffin cups. Place the muffin tin on the oven rack. Bake the muffins for 20 minutes using conventional heat at around 200°C or fan-assisted heat at around 180°C. Remove the muffins from the tin after 10 minutes and let them cool on a wire rack.
