Ingredients for 1 servings:
- 4 eggs
- 200 g butter, soft
- 150 g sugar
- 1 packet of vanilla sugar
- 1 tsp lemon zest, untreated
- 300 g flour
- ½ pack of baking powder
- ½ cup milk
- 1 dashes rum or rum-flavoring

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
enough for approx. 12 pieces
Makes 12 muffins. First, separate the eggs and beat the egg whites until stiff peaks form. Beat the butter and sugar until very fluffy. Gradually add the egg yolks and mix well. Add the vanilla sugar and lemon zest. Mix the flour with the baking powder and sift it over the egg mixture. Gradually add the milk (the batter should drip off the spoon and not be too mushy). Stir in the rum and finally fold in the beaten egg whites. Finally, line the muffin tins with paper baking cases and spoon the batter into the cases. Bake the muffins in a preheated oven at 200°C (top/bottom heat). After 10 minutes, reduce the heat to 180°C (top/bottom heat) and continue baking until the muffins are golden brown. Tip: You can now be really creative and make the muffins in many different variations – e.g. with chocolate chips, cocoa powder or with fruits such as blueberries or raspberries.
