Ingredients for 12 servings:

  • 200 g flour
  • 3 tsp baking powder
  • 1 packet of vanilla sugar
  • 125 g butter, melted
  • 100 g marzipan, finely chopped
  • 500 g sweet cherries (preferably fresh!)
  • 3 eggs
  • powdered sugar
  • 200 g sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Marzipan cherry muffins

Pit and halve the cherries. Mix the flour with the baking powder, sugar, and vanilla sugar. Add the eggs and butter and mix well. Then stir in the cherries and marzipan. Divide the batter into muffin cups (I made about 14-16). Bake at 180°C (top/bottom heat), 160°C (fan oven), or gas mark 2-3 for about 30-35 minutes. Let the muffins cool and sprinkle with powdered sugar. Tip: You can use a little cinnamon or a vanilla pod instead of the vanilla sugar.
