Muffins with Hand and Foot

The perfect muffins with hand and foot recipe with a picture and simple step-by-step instructions.

the dough

  • Food starch
  • Flour to taste
  • Tartar baking powder
  • Salt
  • Bananas
  • Avocado
  • Rapeseed oil
  • Soy or yogurt 10%
  • Spinach powder (in half of the batter)
  • Beetroot powder (in the other half of the batter)

the topping

  • Philadelpia cream cheese
  • Cocoa powder (80%)

Preface

  1. This muffin is with spinach and / or beetroot vegetable powder and a cream cheese topping that I made with baking cocoa powder. I think it is suitable for VEGGI. Are they healthy muffins ??? YES !!! I’ll put it this way, at least they’re not sugar bombs 🙂

the preparation (the dough)

  1. First, preheat the oven to 180 degrees top / bottom heat.
  2. The cornstarch is mixed with the flour and the baking powder and sifted into a bowl. Finally, add a pinch of salt.
  3. Peel the bananas and break them into pieces. Spoon the avocado out of the skin. Put it in the food processor and mix well. Now add the oil and yoghurt. Mix backwards.
  4. Let the machine run and add the flour mixture spoon by spoon. Let mix on a low level for 2 minutes. Then they divide the dough into desired amounts. Well e.g. add the spinach powder. If the dough is not GREEN enough for you, just add some more spinach powder. The dough is quite creamy when it is optimal.
  5. Fill the dough into greased muffin tins and bake it at 190 degrees for 30-35 minutes.
  6. While you are baking the muffins, stir the topping and put it in a piping bag. Place the bag in the refrigerator until you need it.
  7. As soon as the muffins are baked – let them cool down for about 10 minutes and then spray the topping on as you wish.
