Apple Pancakes Baked in Oven

my apple pancakes are really a cake
- Flour
- Powdered sugar
- Vanilla pod (pulp only)
- Baking powder
- Cream 30% fat
- Greek yogurt 10% fat
- Oil
- Eggs (size L)
- Apples (Pink Lady)
- Lemon (just the juice)
- Whole milk couverture
- Icing sugar to finish
Preface
- Sometimes – I find – recipe names (title) rather confusing – because the statement is not clear or confusing, and what it ultimately represents on the plate. Precisely for this reason I have this recipe today – for the finished (prepared) what it says – a cake – an apple pancake. But W A S differentiates my recipe from other apple pancake recipes? not a lot – as far as the ingredients are concerned, but a lot as far as the visual result
preparation
- You start by washing the apples, drying them and cutting them into the finest cubes. Then sprinkle the lemon juice on the apple cubes and add the vanilla pulp. Mix well and let it flow through.
- Next, put sifted flour, powdered sugar and baking powder in a bowl. Then give the beaten eggs and pour in the oil and cream. Beat with a hand mixer for 3-5 minutes. Now add the yoghurt and apples. Now lift this evenly under the dough.
- Switch the oven on to 170 degrees top / bottom heat.

- After you have greased a baking mold – I’ll use a silicone mold – let the dough run into it. Put the baking pan in the middle of the oven. Now bake for 40 minutes. During this time they melt the couverture in a water bath. After the apple pancake is baked, it is immediately coated with the couverture. As a finish powdered sugar – done!
- If I don’t have any children at the table – I make an eggnog cream for this, which is completely fixed in my ISI.
Tip at the end !!!
- We like to do it – and it is definitely worth trying – if you like lukewarm apple cake – and also something crispy – simply put the apple pancake (frozen and sliced before freezing) in the toaster. Is a great EXTRA for Sunday breakfast 🙂 and if you like – you can of course still cook the dough in the pan.
