Ingredients for 12 servings:
- 100 g oat flakes, wholemeal
- 300 ml kefir
- 100 g apricot(s), dried
- 1 orange(s), the juice
- 200 g flour
- 2 tsp baking powder
- 50 g butter, soft
- 100 g cane sugar (raw cane sugar)
- 1 egg(s)
- Cinnamon
- 12 paper baking cups
Instructions

Mix the oats and kefir and soak for about 25 minutes. Chop the dried apricots and marinate in the orange juice for about 10 minutes, then drain. Mix the flour and baking powder. Cream the butter and sugar with the egg until fluffy. Stir in the flour, a pinch of cinnamon, and the apricots. Add the oatmeal-kefir mixture to the batter. The batter should be creamy. If it’s too runny, add a little more flour until it falls off the spoon with difficulty. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the paper baking cups in the muffin tin and fill them halfway with the batter. Bake for about 20 minutes until golden brown.
