Ingredients for 1 servings:
- 2 eggs
- 100 g butter
- 85 g sugar
- 1 pinch of salt
- ½ tsp lemon juice, or lemon vodka
- 1 tbsp eggnog
- 1 tbsp desiccated coconut
- 145 g flour
- 5 g pudding powder, vanilla
- 1 ½ tsp baking powder
- ½ tsp rum

The dough is suitable for compote, frozen and fresh fruit, for 12 muffins
Mix the ingredients into a batter and pour it into the muffin tin. Top with fruit, such as blueberries, apples, apricots, rhubarb, plums, sour cherries, or currants. Bake for 5 minutes at 200°C, 8 minutes at 180°C, 8 minutes on the second rack, and about 15 minutes on the third rack. Tip: For a 26 cm tin, simply use 1/3 more ingredients. The baking time remains the same.
