Ingredients for 1 servings:
- 150 g flour
- 150 g speculatius (spiced speculatius)
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- 1 pinch of clove powder
- 100 g sugar
- 125 ml buttermilk
- 125 ml wine (mulled wine)
- 80 g margarine, soft
- 2 eggs
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Crumble the spiced speculatius biscuits and mix them in a bowl with the flour, baking powder, baking soda, and spices. In another bowl, whisk the eggs, sugar, buttermilk, mulled wine, and margarine, preferably with a hand mixer. Fold the “liquid” mixture into the flour mixture. Pour the batter into the muffin tin or paper baking cups and bake in a preheated oven (center, 160°C fan/convection oven) for 20-25 minutes.
