Ingredients for 1 servings:

  • 200 g flour
  • 125 g butter
  • 1 egg(s)
  • 125 g sugar
  • 1 tsp baking powder
  • 750 g quark
  • 200 g sugar
  • 4 eggs
  • 1 packet of sauce powder (vanilla dessert sauce without cooking)
  • 1 packet of vanilla sugar
  • 1 tbsp lemon juice

Quark cake

For the base, put the flour, butter, 1 egg, 125g sugar, and baking powder in a bowl. First mix with a dough hook, then knead by hand. If the dough sticks too much to your hands (this is usually due to the size of the egg), gradually add a little more flour. The dough should have a smooth consistency. Press the dough into a prepared springform pan (26cm) and pull up the edges. Then put the quark, 200g sugar, vanilla sugar, sauce powder, 4 eggs, and lemon juice in a bowl and mix everything together. Pour onto the base. Bake in a preheated oven at 170°C for approx. 50 minutes. The cake should be golden yellow and firm. You can easily check how baked it is by gently shaking the pan. Then let it cool and serve. Other tips: Grease the cake pan with butter and sprinkle with breadcrumbs so the cake can be easily removed. If you like, you can also fold chopped fruit into the batter. However, if using fruit with a high water content, make sure it’s drained thoroughly first. You may also want to dust it with wheat flour.
