Mushroom pak choi soup

Ingredients for 2 servings:

  • 1 small onion(s)
  • 1 tbsp oil
  • 500 ml broth
  • 250 g mushrooms
  • 100 g pak choi
  • 100 ml milk
  • salt and pepper
  • 1 small potato(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean and thinly slice the mushrooms. Clean, wash, and slice the pak choi. Peel and finely dice the potatoes. Peel and dice the onion, and sauté in oil. Add the vegetables and pour in the broth and milk. Simmer for 20 minutes. Remove a few mushrooms from the pot for garnish. Purée the soup and season to taste. Ladle onto plates. Add the reserved mushrooms and serve.
