Ingredients for 3 servings:

  • 250 g mushrooms, fresh
  • 1 stalk(s) leek
  • 5 tbsp walnuts, chopped
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • herbal salt
  • Cayenne pepper
  • 1 clove(s) garlic
  • Thyme
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mushroom salad

Wash the mushrooms thoroughly (they are eaten raw) and slice them very thinly. Toss with the lemon juice to coat all the mushrooms. Wash and trim the leek, and slice it very thinly. Add to the mushrooms. Mix everything with the walnuts (coarsely chopped), oil, crushed garlic, thyme, cayenne pepper, and salt and pepper, or season to taste. If you like, you can also make this into a warm appetizer by placing the mushroom slices on a baking sheet and grilling them for a few minutes using the oven’s grill function. Then drizzle with lemon juice and proceed as described above.
