Mushroom Salad with Ajvar

The perfect mushroom salad with ajvar recipe with a picture and simple step-by-step instructions.

  • 250 g Fresh mushrooms
  • 1 piece Lemon
  • 1 tsp Sugar
  • 2 tbsp Ajvar mild
  • 2 tbsp Rapeseed oil
  • 2 piece Spring onions
  1. Cut the mushrooms into as thin slices as possible.
  1. Rub the lemon, then squeeze it.
  1. Make the marinade from lemon juice, lemon zest, sugar (powdered sugar is best), ajvar and rapeseed oil. Pour this over the mushrooms.
  1. I always put the lettuce in a tupper bowl with a lid, so the mushroom slices remain largely intact when mixed / shaken.
  1. The mushrooms should steep for a good 3 hours (overnight does not hurt either).
  1. Cut the spring onions into rolls and add to the mushrooms.
  1. The salad goes well with jacket potatoes.
