Ingredients for 4 servings:
- 2 carrots
- 3 Celery
- 300 g white mushrooms, sliced
- 125 ml olive oil
- 35 g Parmesan, shaved
- 2 tbsp lemon juice
- 2 tbsp balsamic vinegar
- some salt and pepper, from the mill
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes
Clean and wash the vegetables. Finely grate the carrots and thinly slice the celery. Place the carrots, celery, and mushroom slices in a bowl. Add olive oil, lemon juice, and balsamic vinegar, season with salt and pepper, and mix well with the vegetables. Let stand for 10 minutes, season to taste, and garnish with Parmesan cheese.
