Mushroom Soup

The perfect mushroom soup recipe with a picture and simple step-by-step instructions.

  • 500 g Fresh mushrooms
  • 1 Clove of garlic
  • 1 Onion
  • 100 g Mixed minced meat
  • 300 ml Milk
  • 100 ml Boiling water
  • 2 tbsp Cream cheese
  • Extra virgin olive oil
  • Salt
  • Black pepper from the mill
  • Sugar
  • 1 tsp Sweet paprika powder
  • 0,25 bunch Fresh celery leaves
  • Wild garlic
  • 1 tbsp Butter
  1. Peel and roughly chop the onion and garlic. Halve the mushrooms. Cut a handful of mushrooms into slices and fry them separately in a pan with wild garlic and butter until crispy.
  2. Heat the olive oil in a saucepan and sauté the onions, garlic and minced meat in it. Add mushrooms, pepper, sugar, salt and paprika powder and roast.
  3. Deglaze with milk and pour boiling water. Refine with cream cheese, celery and butter and puree. Season to taste and serve.
