Mushrooms in balsamic vinegar

Ingredients for 4 servings:

  • 500 g mushrooms, small white
  • 2 cloves garlic
  • 2 sprigs rosemary
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean the mushrooms and trim the stems. Finely chop the garlic cloves. Wash the rosemary sprigs. Heat the oil in a pan and add the finely chopped garlic. After 2-3 minutes, add the mushrooms to the pan and heat gently, stirring constantly. When the mushrooms have significantly reduced in size, add the rosemary sprigs and deglaze with balsamic vinegar. Continue cooking until the balsamic vinegar has reduced to a syrup. Season to taste with salt and pepper. Serve warm or cold.
