Mussels in Riesling sauce

Ingredients for 2 servings:

  • 1,500 g mussels
  • 1 bunch of soup vegetables
  • 1 liter of wine (Riesling)
  • 1 onion(s)
  • 2 cloves garlic
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brush the mussels under running water and remove the beards (discard any that open). Change the water several times (to prevent sand from getting stuck between your teeth). Dice the vegetables. Sauté the garlic and onions until translucent. Stir in the remaining vegetables. Sauté lightly. Deglaze with 2 cups of Riesling and simmer for 10 minutes. Add the remaining wine. Continue simmering. Now add the mussels and simmer for about 8 minutes. Swirl the pan several times. Transfer the mussels to a large bowl and serve with baguette. (Discard any closed mussels!)
