Ingredients for 10 servings:

  • 30 g mustard (medium hot)
  • 70 g sugar
  • 7 g salt
  • 1 pinch(s) of pepper
  • 220 ml oil
  • 180 ml vinegar

A professional recipe from the catering industry

Stir in the mustard, season, and then slowly add the vinegar and oil while stirring. Finally, stir in the water. I use about 100 ml of water. It’s best to transfer the dressing to an oil or vinegar bottle. It will keep in the refrigerator for a few days. Always shake the bottle well beforehand, as the oil always settles. This recipe makes enough for one bottle (1 liter). I like to use this recipe for leaf salads. It tastes especially delicious with lamb’s lettuce!
