Ingredients for 4 servings:

  • 2 tbsp butter
  • 1 onion(s)
  • 2 tbsp mustard, medium hot
  • some flour
  • 500 ml meat broth or vegetable broth
  • 2 cups crème fraîche with herbs
  • e.g. chives and/or parsley, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the chopped onion in the butter, add the mustard, and quickly make a roux with the flour. Deglaze with the stock and bring to a boil, stirring constantly. Remove the pan from the heat and stir in the crème fraîche until a smooth sauce forms. Bring back to a boil. Sprinkle with freshly chopped chives and/or parsley, if desired. Tastes great with boiled potatoes and eggs, but also with fish; it’s very filling.
