Mustard sauce with apple and celery

Ingredients for 4 servings:

  • 100 g celery
  • 100 g butter, cold
  • 1 apple
  • 300 ml meat broth
  • 1 pinch of coriander
  • 1 pinch of cinnamon
  • 1 pinch of nutmeg
  • 1 tbsp lemon juice
  • 3 tbsp mustard (tarragon mustard)
  • 1 tbsp crème fraîche
  • 1 tsp honey
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and wash the celery and dice very finely. Peel the apple, core it, and grate it. Melt 1 tablespoon of butter, sauté the celery and apple in it, deglaze with the broth, add the spices and lemon juice, and simmer over low heat for 15 minutes. Then puree until smooth. Mix in the crème fraîche and bring everything back to a boil. Stir in the mustard and honey and remove from the heat. Cut the butter into flakes with a knife. Then whisk these into the sauce. Season to taste with salt and pepper. Serve the sauce with fried fish or meat.
