Mustard vinaigrette for asparagus

Ingredients for 4 servings:

  • 2 small onions or shallots, finely diced
  • 1 ½ tbsp mustard, medium hot
  • 1 ½ tbsp grainy mustard
  • 4 tbsp white wine vinegar
  • 6 tbsp rapeseed oil, or other neutral oil
  • salt and pepper
  • possibly sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

An alternative to hollandaise sauce

Combine the onions, both mustards, and white wine vinegar. Finally, whisk in the oil until the mixture is thickened. Season with salt and pepper. If it’s too acidic for you, add a pinch of sugar. Serve with the asparagus. Suitable side dishes: Buttered potatoes and salad, hash browns and salmon fillets. This vinaigrette could certainly be used in other ways, such as in salads. But I’ve never tried it because I love the combination with asparagus!
