Ingredients for 4 servings:

  • 200 g mustard seeds or mustard flour
  • 200 g sugar
  • ½ liter of water
  • 75 ml vinegar (essence)
  • 2 tsp salt
  • 2 tsp sugar
  • 1 small onion(s), roughly diced
  • 1 bay leaf
  • 2 carnations
  • 2 juniper berries if needed
  • 5 peppercorns
  • 2 garlic cloves

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

hot to medium-hot mustard

Grind the mustard seeds into a powder using a mortar and pestle or a coffee grinder (not necessary for mustard flour). Then mix with the sugar. Place the remaining ingredients in a saucepan and bring to a boil. Then simmer over low heat for about 5 minutes. Pour the resulting liquid through a sieve into a suitable bowl and gradually stir in the mustard and sugar mixture. Then everything can be stored in jars. Tip: If you don’t like it too spicy, let the mustard stand in the refrigerator for a few days (don’t be fooled by the amount of sugar).
