Ingredients for 4 servings:

  • 6 bread rolls, sliced
  • 375 ml milk
  • 80 g butter
  • 4 eggs
  • 2 egg yolks
  • 60 g bacon (belly bacon or pork belly)
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pour the cold milk over the sliced ​​rolls and let stand for 10 minutes. Cream the butter until light and fluffy, then gradually add the 4 eggs and 2 egg yolks, continuing to cream. Pour the mixture over the sliced ​​rolls. Cut the bacon into small cubes and fry until light and brown in a pan (in Bavaria we say “render the bacon”). Add to the rolls. If you don’t like bacon, you can just add the rendered fat. Add a pinch of salt and knead everything together. Wrap in a napkin (tea towel), tie at both ends, and simmer in boiling salted water for 35-45 minutes.
