Napkin Dumplings with Lamb’s Lettuce on Chestnut Vinaigrette

vinaigrette

  • 50 ml White wine vinegar
  • 100 ml Sunflower oil
  • 50 ml Olive oil
  • 40 g Sugar
  • 50 g Chestnuts

Napkin dumplings

  • 400 g Stale bread
  • 450 ml Soy milk liquid
  • 20 g Vegetable margarine
  • 1 pinch Nutmeg
  • 0,5 piece Diced onion
  • 1 pinch Flour
  • 1 bunch Parsley

Napkin dumplings

  1. Heat the milk and add the margarine, season with salt, pepper and nutmeg. Pour over the crumbs. Add the steamed onion and let it soak for 15 minutes. Form “sausages” in cling film, wrap aluminum foil around it again and let simmer for at least 30 minutes.

  1. For the salad, simply mix all the ingredients for the vinaigrette and season with salt and pepper.
