Nectarine-melon spread

Ingredients for 1 servings:

  • 600 g nectarine(s), prepared and weighed
  • 400 g honeydew melon(s), prepared and weighed
  • 3 lemons, untreated
  • 1 pack of gelling sugar 2:1, 500 g

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 4 minutes

Pour hot water over the nectarines, let stand for a few minutes, peel off the skins, and remove the seeds. Chop the nectarines and puree. Cut the melon into small pieces. Peel the lemon zest and cut into very thin strips, or zest the lemons. Juice 1 lemon. Combine the nectarine puree with the melon pieces, lemon juice, zest, and preserving sugar in a saucepan. Stir continuously and bring to a boil. Boil gently for about 4 minutes. Pour the hot spread into jars, seal them, and turn them upside down for 5-10 minutes. You can also use Galia or Charentais melon, but not watermelon!
