Ingredients for 4 servings:
- 500 g pork loin(s)
- 8 slices of bacon
- 1 m.-large zucchini, yellow
- 1 medium-sized red bell pepper(s)
- 3 tbsp olive oil
- pepper
- possibly salt
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 33 minutes
Mediterranean grilled dish
Cut the pork loin into 8 medallions. Prepare the zucchini and bell peppers and cut them into slices or chunks. Wrap each piece of meat with a slice of bacon and skewer each piece with the vegetables (using soaked wooden skewers), brushing them with olive oil and grilling for about 4 minutes per side. Serve seasoned with freshly ground pepper and a little more salt, if desired. You can also use rosemary sprigs instead of wooden skewers. Remove half of the needles from the bottom of each skewer and skewer the ingredients.
