Roasted meat on a skewer

Ingredients for 4 servings:

  • 2 large onions
  • 2 tbsp salt
  • 500 g lamb, from the leg
  • 1 tbsp olive oil
  • 1 tbsp thyme, chopped (fresh or dried)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Puree the onions with the salt and let stand for about 15 minutes. In the meantime, cut the meat into 2-3 cm cubes. Strain the onion juice through a fine sieve and mix with the meat pieces. Stir in the olive oil and thyme. Cover and let marinate for at least 1 hour. Then thread the meat very loosely (with gaps between them) onto soaked wooden skewers and grill. Note: Never skewer the meat with vegetables, as this will make it tough!
