New potato casserole with sheep's cheese

Ingredients for 2 servings:

  • 4 potatoes (early potatoes/Heurige) with skin
  • 150 g sheep’s cheese
  • 2 pointed peppers
  • 2 tomatoes
  • 2 spring onions
  • 5 tbsp olive oil, good
  • n. B. Olives, black or green
  • Spice mix, Turkish or Italian, according to taste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

quickly prepared

Slice the pointed peppers, tomatoes, and spring onions and place them in a baking dish. Thinly slice or dice the feta cheese and arrange them on top with the olives. Season lightly and drizzle with 3 tablespoons of olive oil. Then thinly slice the raw new potatoes with their skins on and layer them on top. Finally, drizzle with the remaining olive oil and sprinkle with the seasoning. Cover the baking dish and bake in a preheated oven at 180°C for about 30 minutes.
