Ingredients for 1 servings:

  • 200 g biscuits (amarettini)
  • 100 g butter
  • 250 g white chocolate
  • 100 g double crème (alternatively crème fraîche)
  • 600 g cream cheese
  • 1 packet of vanilla sugar
  • 100 g powdered sugar

Working time approx. 45 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 45 minutes

New York Chocolate Cheesecake

For the base of a 24cm springform pan: Preheat oven and grease the pan. Crumble the biscuits (using a rolling pin, for example). Melt the butter and mix it with the amaretti crumbs. Spread the mixture into the pan and press it down firmly. Bake in the oven at 180°C for 10 minutes. Topping: Chop 200g of chocolate and melt it with the double cream over low heat (or in a water bath if necessary). Mix the cream cheese, vanilla sugar, and icing sugar until smooth. Stir in the cooled chocolate cream. Spread the mixture over the amaretti base. Smooth it out and refrigerate the cake for about 6 hours. Finishing touch: Carefully remove the cake from the pan. Finely shave the remaining 50g of chocolate and decorate the cake with it, forming a border with amaretti biscuits if desired.
