Nicoise's bread dumplings

Ingredients for 1 servings:

  • 10 rolls from the previous day, finely sliced
  • 80 g breadcrumbs
  • 1 tbsp parsley
  • ½ liter of milk
  • 4 eggs

Place the finely chopped or diced rolls in a large bowl. Add the eggs, parsley, salt, and cold milk. Let the mixture soak briefly, then mix thoroughly. Add the breadcrumbs and mix until the mixture is finely ground, yet very chewy. Let stand for a while, and the mixture will firm up even more. With wet hands, form about 12 large dumplings. Place in a pot of boiling salted water. Bring to a boil briefly, then reduce the heat and let stand for about 15 minutes. Roast pork goes perfectly with this.
