Ingredients for 1 servings:

  • 1 egg(s)
  • 150 g margarine
  • 3 tbsp cane sugar
  • 1 tbsp lime juice
  • 150 g desiccated coconut
  • 150 g flour
  • 30 g cornstarch
  • ¼ tsp cayenne pepper

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Separate the egg and set aside the egg white. Whisk together the margarine, sugar, lime juice, and egg yolk until fluffy. Add 75g of desiccated coconut, the flour, cornstarch, and cayenne pepper, and knead everything with your hands until a smooth dough forms. Cover the dough and refrigerate for 10 minutes. Preheat the oven to 175°C. Whisk the egg whites. Form the dough into approximately 30 balls, each about 2cm in diameter. Roll the balls first in the egg white, then in the remaining desiccated coconut, and place them on a baking sheet lined with baking paper. Bake in the center of the oven (160°C fan oven) for approximately 12-15 minutes.
