Noodle and tofu salad with peanuts

Ingredients for 2 servings:

  • 250 g spirelli, vegan
  • salt water
  • 150g tofu
  • 2 tbsp peanuts, salted
  • 2 tbsp peanut oil
  • 2 tbsp soy sauce
  • 1 tsp, levelled coriander leaves, dried
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the noodles in salted water according to the package instructions. Meanwhile, dice the tofu and marinate it in the soy sauce. Drain the noodles and transfer them to a bowl. Add the marinated tofu with the sauce and the peanuts. Pour in the oil, stir, and season with coriander, salt, and pepper. Refrigerate until ready to serve.
