Ingredients for 4 servings:

  • 6 eggs
  • 100 g sugar
  • e.g. Vanilla, freshly scraped, extract or dried from the mill
  • 180 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 230 g sour cream, alternatively crème fraîche or sour cream
  • 110 g butter, melted
  • e.g. powdered sugar, whipped cream and/or jam

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Beat the eggs with the sugar and vanilla (I always use dried vanilla from a mill) until frothy. Then add the flour, baking powder, and salt and mix. Next, add the sour cream and melted butter and mix until a smooth batter forms. Let the batter rest for 20 minutes. Lightly grease the waffle iron and bake the batter; I always use about half a ladleful of batter for each waffle. Sprinkle with powdered sugar, if desired, or enjoy with whipped cream and jam. Makes about 13-15 waffles.
