NT Roast Turkey with Fine Orange Sauce
The perfect nt roast turkey with fine orange sauce recipe with a picture and simple step-by-step instructions.
Turkey-roast
- 1,6 kg Fresh turkey thigh, from a poultry farm near us

- 1 pinch Black pepper from the mill
- 1 pinch Curry
- 1 pinch Sweet paprika
- 1 pinch Cayenne pepper
- 0,5 liter Apple cider
Fine orange sauce
- 2 piece Freshly squeezed oranges
- 2 piece Freshly chopped shallots
- 1 piece Freshly chopped spring onions
- 2 piece Garlic cloves chopped
- 1 tbsp Orange olive oil

- 6 tbsp Apple cider / fat mixture from the drip pan
- 1 some Orange liqueur
- 1 pinch Sea salt fine
- 1 pinch White milled pepper
- 1 some Strength
- 1 tbsp Roughly chopped parsley
- Roast turkey: Wash the leg and pat dry. Then rub all over with the spices. Preheat the electric oven to 80 degrees. Put the wire rack in the middle of the oven. Slide in the drip pan filled with the apple cider.
- Place the roast on the wire rack, skin side up) and cook for approx. 6-8 hours. The cooking time depends on the oven and how thick the roast is.
- Finally, at a core temperature of around 68 degrees, set the oven to 180 degrees and turn on the grill and let the turkey thigh brown to taste. The core temperature should be around 72 degrees at the end. The long cooking time means that the meat is completely cooked through.
- Orange sauce: sauté the spring onions, shallots, garlic in the orange oil, then add the parsley and sauté briefly. Now press everything through a fine sieve.
- Degrease the apple cider / fat mixture and add the juice from the pressed vegetable-orange oil and bring everything to a boil while stirring.
- Pour in the game bird stock and deglaze everything together with the orange juice. Season to taste with the orange liqueur and the spices. If you like the sauce thicker, you can thicken it with starch.
- We had a delicious paprika rice as a side dish with the juicy tender turkey meat and the delicious sauce, but salt potatoes also go well with it. You can mash them in the sauce.
