Spicy Baking: Caprese Tomato Muffins
The perfect spicy baking: caprese tomato muffins recipe with a picture and simple step-by-step instructions.
- 150 g Flour type 550
- 125 g Quark 40%
- 2 piece Free range eggs
- 40 ml Sunflower oil
- 2 teaspoon Baking powder
- 1 teaspoon Black pepper from the mill
- 1 teaspoon Salt
- 20 piece Date tomatoes, fresh, red and yellow
- 125 g Mozzarella
- 1 piece Spring onion
- 1 handful Basil leaves, fresh
- Make a batter from flour, quark, oil, eggs, salt, pepper and baking powder.
- Quarter the date tomatoes, cut the spring onions into rolls, dice the mozzarella and chop the basil.
- Fold all of this into the batter.
- Line a muffin tin with paper liners and divide the batter on it.
- Bake in a preheated oven at 190 degrees for about 30 – 35 minutes.
- Tip 6: If you stir a tablespoon of tomato paste into the dough, the muffin will be even fruity and get a great color. It is also a great pleasure to top it off with a little grated cheese.
