Ingredients for 1 servings:
- 50 g flour, whole grain
- 1 tsp, leveled baking powder
- 1 pinch of salt
- 1 egg(s)
- 1 tsp low-fat curd cheese
- 30 g Stevia
- 30 g carrot(s), grated
- 1 orange(s), untreated
- 10 g chopped pistachios

Preheat the oven to 180°C (top/bottom heat). Combine the flour, baking powder, salt, egg, low-fat quark, stevia, and grated carrots in a bowl. Grate the orange zest and add it to the batter. Halve the orange, squeeze the juice from one half, and add it to the batter. Stir well again. Pour the batter into the muffin tin, sprinkle with pistachios (or other nuts, of course), and bake at 180°C (top/bottom heat) for about 20-25 minutes.
