Nut cake according to Grandma Paula

Ingredients for 1 servings:

  • 250 g butter or margarine
  • 200 g sugar
  • 4 eggs
  • 2 drops of bitter almond flavor
  • 250 g wheat flour
  • 3 tsp, leveled baking powder
  • 200 g hazelnuts, ground
  • 100 g dark chocolate, coarsely chopped
  • e.g. powdered sugar or dark chocolate coating

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Preheat the oven to 165-175 degrees Celsius (top/bottom heat). Cream the butter with a hand mixer until fluffy, gradually adding a little sugar and one egg at a time. Beat each egg for about 1 minute. Then stir in the flour mixed with baking powder, hazelnuts, bitter almond oil, and chopped chocolate. Pour the batter into a greased and floured ring tin and bake on the middle rack for 50-65 minutes. Baking time varies depending on the oven and the size of the tin (mine has a diameter of 26 cm). So it’s best to do a skewer test and check the cake after 50 minutes! Once the cake has cooled, dust it with powdered sugar or cover it with melted chocolate.
