Nut cake without milk, wheat flour and sugar

Ingredients for 1 servings:

  • 4 eggs
  • 15 g Stevia
  • 250 g oil
  • 350 g spelt flour
  • 200 g nuts, ground
  • 1 packet of baking powder
  • 100 ml water
  • Oil and ground nuts for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Beat the eggs until frothy. Then add the remaining ingredients and mix. The batter will be quite firm. Pour the batter into a greased baking pan (sprinkle with ground nuts). Bake at 175°C fan-assisted oven on the second rack from the bottom for approximately 50-60 minutes. The nut cake must be eaten quickly, as it dries out quickly after cutting. If you don’t have any food intolerances, you can use 200g of sugar and 1g of vanilla sugar instead of stevia, 250g of butter or margarine instead of oil, and milk instead of water; this way the cake won’t be too dry.
