Nut macaroons / nut heaps

Ingredients for 1 servings:

  • 400 g walnuts, ground, possibly mixed with almonds and hazelnuts
  • 4 egg whites
  • 250 g powdered sugar
  • 2 drops of bitter almond flavor
  • 1 tsp cinnamon
  • 2 drops of flavoring (rum oil) or some real rum (1-2 tbsp)
  • 1 pack of wafers, round

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

with walnuts and cinnamon

Whisk the egg whites until stiff and mix with the powdered sugar, then stir in the nuts and remaining ingredients. Form the stiff mixture into balls and place them on the wafers. Tap them once and press in a piece of walnut or, if you like, almonds. Bake at 180°C for about 20 minutes. Check occasionally; when lightly browned, remove from the oven and let cool.
