Ingredients for 1 servings:

  • 50 g walnuts
  • 50 g pine nuts
  • 2 garlic cloves
  • 100 g Parmesan
  • 100 ml olive oil
  • 1 tbsp mustard, grainy, hot, not sweet!
  • pepper
  • Cayenne pepper
  • Sea salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with pasta or as a meat crust

Peel the walnuts and add the kernels and pine nuts to the food processor. Peel the garlic, finely chop the cheese, and add it to the nut mixture along with the mustard. Then puree everything. Gradually add the oil until a smooth sauce forms. Season with pepper, cayenne pepper, and salt. Tip: I usually use two types of mustard: a bit of coarse, hotter mustard and a bit of mustard with green pepper (in this case, the pepper can be omitted). This goes well with spaghetti or penne. Mix the pesto with the pasta and garnish with fresh parsley. Pesto is also a great crust for a nice piece of meat.
