Oat cheesecake

Ingredients for 6 servings:

  • 200 g oat biscuits
  • 100 g butter
  • 100 g sugar
  • 50 g cornstarch
  • 1 tsp vanilla sugar or the pulp of 1 vanilla pod
  • 2 tbsp lemon juice
  • 250 g cream cheese
  • 250 g low-fat curd cheese
  • 50 ml cream
  • 3 egg yolks
  • 3 egg whites, beaten stiffly

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 1 hour; Total time approx. 7 hours 30 minutes

Finely crush the biscuits, mix in the melted butter, and use this to form the base and sides of a 19 cm springform pan. Line the base of the pan with baking paper and oil the edges. Preheat the oven to 150°C (top/bottom heat). Mix the remaining ingredients in the order listed, finally stirring in the stiff egg whites. Pour the mixture into the springform pan and bake for about 1 hour. Then turn off the oven and wait another 10 minutes before opening the oven door. Let cool and serve with raspberry sauce, for example.
