Oat pancakes

Ingredients for 2 servings:

  • 1 m.-sized banana(s), pureed
  • 230 ml milk (oat milk)
  • 200 g oat flour, wholemeal
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 1 pinch(s) of vanilla, or vanilla flavoring
  • e.g. maple syrup, fruit, ice cream or jam
  • possibly oil

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Blend all the ingredients for the batter with a hand blender; it should be very thick. Let it rest for about half an hour. In a well-coated pan (with a little oil if you like, but it works fine without) bake in small batches over medium heat until lightly browned, then flip. Serve warm with your choice of side dishes. Tip: You can easily make your own oat flour from rolled oats.
