Oatmeal pine nut cookies

Ingredients for 1 servings:

  • 125 g butter
  • 100 g raw cane sugar
  • 1 m.-sized egg(s)
  • 1 packet of Bourbon vanilla sugar
  • 40 g almonds, ground
  • 50 g pine nuts
  • 125 g oat flakes, wholegrain
  • 60 g buckwheat flour
  • 1 tsp, heaped baking powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cream the butter with the raw cane sugar until fluffy. Add one egg. Stir in one packet of bourbon vanilla sugar. Stir the almonds into the batter. Then stir in the pine nuts. Mix the whole-grain oats with the buckwheat flour and baking powder and gradually stir in. Using two teaspoons, place small heaps, spacing them apart (they may spread slightly), on a baking sheet lined with baking paper. Preheat the oven to 160°C (fan/convection oven). Place the baking sheet in the oven and bake for approximately 10 to 15 minutes (depending on the oven—the first baking sheet took 12 minutes, the subsequent baking sheets only 10 minutes). When the edges of the cookies begin to brown, remove the baking sheet from the oven.
