Oatmeal Walnut Cookies

Ingredients for 1 servings:

  • 125 g butter, soft
  • 100 g raw cane sugar
  • 1 large egg(s)
  • 75 g walnuts, chopped
  • 125 g oat flakes, wholegrain
  • 60 g flour
  • 1 tsp, heaped baking powder

Working time approx. 30 minutes; Cooking/baking time approx. 9 minutes; Total time approx. 39 minutes

Beat the butter with a whisk until light and fluffy, adding the raw cane sugar a teaspoon at a time. Add the egg. Stir in the chopped walnuts (either chopped beforehand or bought ready-made). Mix the oats with the flour and baking powder and stir in a spoonful at a time. Preheat the oven to 170°C fan/convection oven. Place small heaps of dough on a prepared baking tray using a teaspoon. The cookies will spread a little, so don’t put too many on one tray. I used a normal-sized baking tray for 9 cookies. Bake for 9 minutes per baking tray, but you do have to keep an eye on your oven’s baking habits so the cookies don’t burn. Makes approx. 40 cookies.
