Working time approx. 20 minutes; Total time approx. 20 minutes

after Hildegard of Bingen

Cook the spelt in water for 10-20 minutes, stirring constantly, until soft. Add the apple slices and seasonings and continue simmering over low heat until the apples are soft. Sprinkle with chopped almonds and psyllium husks and serve hot. I make this porridge for breakfast. It’s worth it, very healthy, and a great way to start the day.
