Oatmeal yogurt bread

Ingredients for 1 servings:

  • 600 g natural yogurt, 1.5% fat
  • 225 g oat flakes
  • 675 g flour
  • 2 eggs
  • 3 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp salt
  • e.g. herbs or spices
  • e.g. chia seeds or sunflower seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat the oven to 200°C (top/bottom heat). Combine all ingredients in a bowl, mix well, and shape into two loaves, or pour the entire dough into a large loaf pan. If desired, the loaves can be sprinkled with chia seeds, sunflower seeds, or similar. Bake in the hot oven for 30-40 minutes. Note: The basic ingredients are so neutral that the bread can be made both savory and sweet. I usually divide the dough and make one loaf with honey or sugar or something similar, and the other with a bag of salad herb mix or bruschetta seasoning. Of course, you could also shape it into rolls. The sky’s the limit.
