Ingredients for 6 servings:

  • 6 m.-sized jacket potatoes
  • 5 eggs, hard-boiled
  • 1 cucumber(s)
  • 1 ring/s of meat sausage
  • ½ bunch radishes
  • ½ bunch of spring onions
  • 1 ½ liters of Ayran (Turkish yogurt drink)
  • Salt
  • Dill and parsley, finely chopped, as desired

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Cold Russian soup

Peel the potatoes and eggs after they have cooled and dice them. Dice the cucumber, sausage, and trimmed radishes. Wash the spring onions and cut them into small rolls. Mix everything well in a bowl. Then pour in the ayran and mix well again. Season with salt. Stir in dill and/or parsley, if desired. The soup tastes best after it has been refrigerated for a few hours.
